The Cashew Tree: A Tropical Wonder
Cashew trees (Anacardium occidentale) thrive in tropical climates, primarily in West Africa, India, Vietnam, and Brazil. A single tree can produce up to 50 kg of raw cashew nuts per year, but it takes 3–5 years before a newly planted tree bears its first fruit. The cashew "nut" actually grows at the bottom of the cashew apple — a pear-shaped fruit that's often discarded or used locally for juice and spirits. This unique growing pattern is just the beginning of what makes cashew production so complex.Harvesting and Processing
Harvesting cashews is labor-intensive work. The nuts are picked by hand after they fall naturally from the tree, a sign of full ripeness. Workers collect them daily during harvest season, which typically runs from February to May. Processing is where the real challenge lies. Each cashew is encased in a hard shell containing caustic resin (cashew nut shell liquid, or CNSL). Traditional processing methods expose workers to this irritating substance, which is why ethical sourcing focuses heavily on safe working conditions and proper protective equipment.The Cooperative Model
In Côte d'Ivoire, the world's largest producer of raw cashews, cooperative farming has transformed communities. Farmers who once sold raw nuts at rock-bottom prices to middlemen now process and export directly, earning 3–4 times more per kilogram. These cooperatives invest in:- Modern processing facilities with proper safety equipment

- Sustainable farming practices that protect local ecosystems
From Farm to Your Table
After processing, cashews are graded by size and quality (W-180, W-240, W-320, etc.), vacuum-packed to preserve freshness, and shipped to markets worldwide. The entire journey from tree to shelf can take 4–6 months.
